How it is made

Four things we will not speed up

The seal

Dough goes around the lid once and comes off once. No stirring, no tasting, no corrections.

The birista

Onions sliced by hand and fried in batches all afternoon. It takes one person two hours a day.

The right rice

Kaima for Malabar, seeraga samba for Ambur, aged basmati for the north. They are not interchangeable.

Running out

Two deghs a night. When they are empty we close, rather than serve rice held in a warmer.

Got there at 6:10 and the mutton was already gone. Went back the next night at half five. Worth rearranging an evening for.
